This is a great meal to prepare for guests, and it only takes about an hour!

When making Chicken Spatchcock, you’ll want to prepare some ingredients beforehand:

  1. Onions
  2. Carrots
  3. Garlic
  4. Celery
  5. Salt
  6. Rosemary
  7. Thyme
  8. Lemon
  9. Olive Oil
  10. Sage
  11. And of course… Chicken!

You’re going to chop up and combine your vegetables and herbs, and spread them out onto a cookie sheet. To make cleanup a bit easier, feel free to line your sheet with aluminum foil.

For a 4 pound bird, you’ll want to preheat the oven to 425 degrees.

Place the chicken onto the bed of vegetables.

Roast the chicken for 40 minutes, or until the chicken has an internal temperature of 160 degrees.

When you take it out of the oven, you’ll want to wait for the chicken to rest for 10 minutes before you cut it and serve.
